Cucina Bambini Christmas Oat Cookie Recipe

We had a go making this recipe with the children at Raised in Bristol at the Greenway Centre and we had a great time! Cooking with children and getting them involved with food prep is a great way to teach them about food and nutrition – a core part of the curriculum at our Raised in Bristol nurseries. It’s been proven children are more likely to try food that they’ve helped prepare, although, with this tasty recipe getting them to try these cookies wasn’t too hard!

Ingredients

For the dough:

  • 2 cups or 180g traditional oats

  • ¼ teaspoon of cinnamon

  • 1 teaspoon vanilla extract

  • 1 large egg (beaten)

  • ⅓ cup or 80ml maple syrup

  • ½ cup or 60g coconut oil/ butter (melted)

  • ⅓ cup or 65g sultanas

For the decoration:

  • ⅓ cup or 65g milk chocolate chips

  • 2 teaspoons of coconut oil/ butter

  • sprinkles!

Method

  1. Preheat oven to 190c

  2. Place oats in a blender or food processor and pulse a few times to make them smoother.

  3. Now in a bowl, mix the blended oats, cinnamon, vanilla extract, egg (at room temperature), maple syrup, sultanas and melted coconut oil/ butter. Stir until combined.

  4. Let the mixture chill in the fridge for 30 mins. This solidifies the mixture and makes the dough thick enough to scoop.

  5. Once chilled, make small dough balls and place on a baking tray lined with greaseproof paper. Slightly flatten your dough balls so they don't rise too high! Bake for 7–9 mins.

  6. Let them cool.

  7. Using a double boiler (bain-marie) or a microwave, melt the chocolate chips with the coconut oil/ butter. Stir until smooth, then dip the cookies and add sprinkles before the chocolate dries!
